James Lewis Kraft in Buffalo
511 Rhode Island Street, Buffalo, New York

The 1903 Buffalo city directory listed Shefford Cheese Company as located at 511 Rhode Island.  It's where James L. Kraft worked before he wound up in Chicago, where he started Kraft Foods after inventing Kraft American Cheese.

I was watching an older episode of "The Food That Built America" about Kraft Foods.  James L. Kraft lived & worked in Buffalo at Shefford Cheese Company.  Mr. Kraft was on a business trip to Chicago when he was fired, or the firm folded (not sure which).  Mr. Kraft never returned to Buffalo, apparently.  Long-story-short, he founded Kraft Foods years later.  The house in which Mr. Kraft resided in 1903 appears to no longer exist (31 Shields).

Kraft was the first to patent processed cheese.  ...   Kraft emigrated to Buffalo, New York in 1902, taking a position as secretary and treasurer of the Shefford Cheese Company. He became a partner in the company the following year, but his partners abruptly dissolved the agreement while he was on a business trip to Chicago — either to inspect the local branch of the company[5] or to supervise it.[6] Stranded in the big city, Kraft used his remaining $65 in capital to rent a horse and wagon and established his own business of buying cheese wholesale and selling it to local grocers.
